Catiope is a hybrid of Caturra and a native Ethiopian specy. It is notable for its new fermentation process called "Cold Press." After harvesting, the temperature during fermentation is raised to 40-45 degrees Celsius for 2-3 days, then feremented at 0-8 degrees Celsius for up to 4 days in cold water tanks. This process increases the potential of the beans and produces cleaner flavors.
