Cold River Fermentation is one of the special fermentation techniques gaining attention in recent years, particularly adopted in regions rich in cold water resources like Ethiopia's Sidama region. It utilizes cold natural river water below 10°C (50°F) for a fermentation process conducted in a consistent low-temperature environment. Its defining characteristic is a clean, clear cup resulting from “slow fermentation”: microbial activity is gentle, enhancing acid quality and drawing out a bright, refreshing acidity. This lot underwent a remarkably long fermentation period of 120 hours, yet achieves astonishing clarity.

The extended fermentation period allows for the development of delicate flavors. Furthermore, the minimal use of natural facilities contributes to its environmental sustainability, another factor drawing significant attention.
