It is no wonder, then, that the Simalem Estate has a Q-grade certified lab called the Simalem Coffee Academy, an environment for learning about specialty grade quality and fully equipped facilities, making it possible to produce small lots of high quality coffee at the world standard. The quality of the beans themselves is excellent, but this lab was also researching advanced processes such as cultivating natural yeast extracted from coffee cherries and utilizing it in the fermentation process.
